  • ⅔ cups Yogurt, Dairy Free
  • 2 tablespoons Vegetable Oil
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Sugar
  • ½ teaspoons Cardamom, Ground
  • ¼ teaspoons Salt
  • 1 ⅓ cups Flour, Gluten Free, Xanthan Gum Free, All-Purpose
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Xanthan Gum
  • 1 teaspoon Baking Powder
  • ¾ cups dice Peach

  1. In the bowl of your mixer, beat egg, dairy free yogurt, oil and lemon juice until combined.
  2. Add dry ingredients and mix until just combined.
  3. Fold in peaches.
  4. Spoon batter evenly into oiled muffin cups.
  5. Bake at 350 degrees for 20 to 23 minutes.
