  • ¾ cups dice and cook Rhubarb
  • ¾ cups mash Strawberries
  • 2 teaspoons zest Lemon
  • ½ cups chop Walnuts

Oven Cook

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Spray a 9 x 5 loaf pan with cooking spray, using one pan per 8 servings.
  2. In mixing bowl combine gluten free flour, baking soda, xanthan gum, sugar, salt, and nutmeg.
  3. In separate bowl whisk oil, rhubarb, strawberries, and lemon zest. Pour fruit mixture into center of dry ingredients and lightly mix to blend. Mix in nuts.
  4. Spoon batter into prepared pan.
  5. Bake at 350F until toothpick inserted in center comes out clean, about 50 minutes.
  6. Cool on rack for 10 minutes before removing from pan and allowing to cool on a cooling rack.

  1. This looks awesome! My son is now dairy free and we are trying gluten free next; I need recipes like this to help ease the transition. Love it!

  2. I have to say I tried making this bread last week and it is now my favorite and am planning on making it asap because I am addicted! I actually prefer it over banana bread and I can’t even tell this is gluten free–this was my first real baking test with with all these new flours. Definitely a winner, so thank you!

  3. I am just looking into gluten free/dairy free after watching several videos on Netflix about what we are really eating. As a major bread lover, gluten free sounds pretty scary to me so I am glad that there are still bread options available. HOWEVER, I have never even heard of all these flours! And I bake all the time. So, if you live in the middle of literally “no where Wyoming” where would you find these items? And any other suggestions for a person thinking of going gluten free/dairy free? Thanks ahead of time.

    1. Hi Angie, yes they’re specialty flours. There are now some GF blended flours you can get in your supermarket, or you can even order them online. Amazon has some good deals as well as some speciality places like Azure Standard that may have a drop off near you believe it or not.
