  • 4 ounces Deli Ham, Sliced
  • 2 ⅔ ounces O'Brien Hashed Brown Potatoes, Frozen
  • 2 teaspoons Butter, Dairy Free
  • ⅓ cups Cheddar Cheese, Shredded, Dairy Free
  • 2 individual Egg
  • 2 teaspoons Milk, Dairy Free
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 2 tablespoons slice Green Onion (Scallion)

These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).

Why would I want to freeze this?

  1. Line silicone muffin cups with ham slices.
  2. Place frozen potatoes and butter in microwaveable bowl.
  3. Microwave for 2 minutes.
  4. Place in ham lined muffin cups.
  5. Sprinkle cheese on top.
  6. In a bowl, combine eggs, milk, salt and pepper.
  7. Beat with a fork.
  8. Pour egg mixture over potatoes and cheese.
  9. Sprinkle with green onions.
  10. Place egg cups in a single layer on a baking sheet and flash freeze.
  11. Once partially frozen, divide among indicated number of freezer bags. Label and freeze.

Prog. Pressure Cooker

These directions help you cook or reheat this meal AFTER it's been frozen for when you are ready to eat it.

  1. Prep from frozen
  2. **Depending on your container size/shape and your serving size, you may need to adjust cooking times given as it is based on 4 servings frozen in indicated container.**
  3. Add water and trivet to the Instant Pot.
  4. Place egg cups on the trivet, lock lid into place and seal steam nozzle.
  5. Cook on high pressure for 5 minutes.
  6. Let pressure release naturally for 10 minutes.
  7. Remove from Instant Pot and enjoy.

    1. I would but if you have silicone cups to spare, you could leave them. It certainly won’t hurt anything.
