Paleo Beef Lettuce Wraps

Ingredients

2 servings
  • 1 pound Ground Beef
  • ⅔ cups dice Onion
  • ⅛ teaspoons Sea Salt
  • 2 teaspoons mince Garlic, Cloves
  • 2 tablespoons peel and mince Ginger, Fresh
  • 2 tablespoons Coconut Aminos
  • 4 teaspoons Rice Vinegar
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Almond Butter
  • 2 teaspoons Water
  • 2 teaspoons Honey, Raw
  • 2 teaspoons Spicy Thai Chili Sauce
  • 2 tablespoons Coconut Oil (serving day)
  • ½ cups dice Green Onion (Scallion) (serving day)
  • ¾ cups drain and chop Sliced Water Chestnuts, Canned (serving day)
  • ¼ cups Cashews (serving day)
  • 10 individual Lettuce, Leaf (serving day)

Freezer Containers

  • 1 Quart Freezer Bag
  • 1 Gallon Freezer Bag

Directions

Heat oil in a large skillet and sauté onion. Add beef and cook until brown. Drain fat. In a small saucepan, combine salt, garlic, ginger, coconut aminos, rice vinegar, sesame oil, almond butter, water, honey, and chili garlic. Cook until heated and stir until it has a smooth consistency. Add to beef. Stir in green onions and water chestnuts and cook until heated through. Scoop into lettuce leaves and top with cashews.

Freezing Directions

Divide beef and diced onion into 1/2 of indicated number of quart freezer bags. Combine salt, garlic, ginger, coconut aminos, rice vinegar, sesame oil, almond butter, water, honey, and chili garlic in a bowl. Divide into remaining 1/2 of indicated number of quart freezer bags. Place 1 beef bag and 1 sauce bag inside of 1 gallon freezer bag, seal, label and freeze.

Serving Day Directions

Add to beef. Stir in green onions and water chestnuts and cook until heated through. Scoop into lettuce leaves and top with cashews.
