These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- In a saucepan over medium heat, combine pineapple, cherries, ginger, vanilla, and nutmeg.
- Cook for 4-5 minutes, stirring frequently.
- Remove from heat and allow to cool completely, about 10 minutes.
- In a large bowl, stir sugar, brown sugar and instant pectin together.
- Once pineapple mixture has cooled, add to sugar and stir constantly for 3 minutes.
- Allow to sit for 30 minutes.
- Use in recipes as indicated.
- Store extras in fridge for one week or divide into freezer containers.

what can I use instead of candied ginger. I don’t care to buy it for such a small amount.
You can use ground ginger instead.
