Since these pizza cups use a refrigerated biscuit for the base, they are super simple to throw together for a snack. They freeze really well also, and are simple to pop in the microwave for a quick snack.

  • 8 fluid ounces Pizza Sauce
  • ½ cups Mozzarella Cheese, Shredded

Oven Cook

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Using a non-stick muffin pan, press a biscuit into bottom of each muffin cup and up the sides of the cup to make a well in the center.
  2. In a bowl, mix browned ground beef with pizza sauce.
  3. Spoon a couple of tablespoons of meat sauce into each muffin cup.
  4. Bake at 375 for 15 minutes.
  5. Sprinkle each cup with cheese then bake an additional 5 minutes.
  6. Allow to cool slightly before removing pizza cups from muffin pan.

  2. My mom has always made something just like this (and now so do I) with ground beef, BBQ sauce, brown sugar, and cheddar cheese called BBQ Jackpots. I have never thought about a pizza version or about freezing them. Thanks for the recipe, I will definitely have to try it!

  3. Well, there are no toddlers in this house, but I’m sure that both my husband and I would enjoy these. I think they would be good to take to work for lunch. Refrigerator biscuits are one versatile product. It’s great that they freeze well, too. I think I would also enjoy the barbecue version Kayla mentions. Thanks for sharing.

    1. While I haven’t tried this recipe with a pizza dough base, I see no reason why it wouldn’t work. If I were attempting this substitution I would allow the pizza dough to rest for 2 hours as described here: Homemade Pizza Dough. After the dough has rested, divide into 16 pieces. Form each piece into a disc-like shape and continue with the recipe above. If you try this, I would love to hear how they came out!

  4. I do the same thing with taco meat too. Great for scout night when we have to get homework done and back out the door quickly. They pack great in lunches too – something different from PB&J 🙂

  5. These also make a great party finger food! I made some with pepperoni and some with sliced black olives for my son’s birthday party and figured I would freeze the leftovers for him – except that only three were left by the end! Thanks for the great recipe!

  6. I use leftover sloppy joes to do this and top with american cheese. I put the biscuit in the cupcake pan, top with meat, any extra veggies, and cheese, then freeze. Once frozen you can take them out and individually wrap and put in a large ziploc bag. 🙂

  7. These sound really great and would be a great way to disguise veggies if you have a toddler that won’t eat theirs, like I currently do. My little one loves pizza and just about vegetable covered with cheese, pasta sauce, or meat will get eaten. Great idea! 😉

    1. I warm them up in the microwave before school and wrap in plastic wrap or foil. My daughter doesn’t mind them being room temperature as long as they aren’t cold.

  8. Looking at this from the uk. Does anyone know if its still known as biscuit dough here? Thinking it would be sweet? Is that right?

  9. I’m wondering if egg could be used as the “dough” instead for a GF breakfast option for toddlers & older kiddos. I’m going to have to do some experimenting!
