What to do with leftover Cream of Wheat?

Facebook fan, Melissa, recently asked for ideas on using leftover cream of wheat–you know, the gooey stuff leftover in the pot when the family decides they’ve had enough. Her question reminded me of a favorite muffin recipe and inspired me to experiment with leftover cooked cereal rather than the dry my recipe uses. The texture is a bit different when using cooked versus dry cereal, but it could be a good way to use up the leftover cereal if you don’t want it to go to waste.

{Cream of Wheat Muffins}

Another idea for leftover cream of wheat (or even oatmeal) is to mix it in with your favorite pancake or waffle batter. Prepare batter as usual, plus add 1 cup cooked cereal. Add additional liquid (milk or water) to thin if needed. The cream of wheat adds a bit of extra nutrient to the favorite breakfast stack. And I’m guessing that added calcium and iron probably even cancels out the butter and syrup. (Wishful thinking, maybe?) Any other ideas? What would you do with leftover cream of wheat?
