When we were approached by Tricia to sample the Everything Beans eBook from Kitchen Stewardship, we both jumped on the opportunity! It was my (Kelly) first food eBook purchase and I was very pleasantly surprised. There is a lot of content and plenty of recipes sure to please everyone in your house. There are helpful hints at the end of each recipe on how to cut corners if needed, how to make the recipe more appealing to your taste. There are also very helpful icons throughout the book to show you the cost of the recipe as well as address any dietary needs.
This book was helpful for me as I have been wanting to get into soaking more beans and trying to freeze them in portions rather than buying them canned. Not that I can’t find great and reasonable organic canned beans in the big box stores, but I want to make it even easier on my budget! I decided to try out the Mexican Black Bean Burgers and Vegetarian Burritos for my family. To be frank the burgers were not a huge hit, however my husband did say they were better than any other veggie burger he’s had, but he prefers beef. I on the other hand thought they were great but needed a little more flavor and kick for my taste. Next time I may add a few more spices and jalapenos and sample during the blending to see what I like. Burritos are a go to at my house and these were a wonderful meatless Monday dish for us. I was pretty pleased with the outcome and even my little toddler gobbled them up!!
Our family (Kristi’s) tried the Mexican Black Bean Burgers and Chickpea Wraps. The Black Bean Burgers were yummy and a nice change from our usual Betty Crocker version. I loved the chickpea wraps. My hu sband (who is not a huge chickpea fan) even thought they were pretty good.
