Baby Food: White Bean Puree

I no longer have babies in the house, but I found this to be a great puree for my picky preschooler.  My son Jaden is not a big fan of meats so sometimes its a challenge to make sure his diet has enough protein in it.  This puree mixes into mashed potatoes and is nearly undetectable.  A sneaky way to get him to eat some protein!  Of course, its a great puree for babies also!

Ingredients:

Directions:

Pulse cannellini beans and water in a food processor until smooth, about 1 minute. Puree should be the consistency of peanut butter. If necessary, add additional water, 1 teaspoon at a time, until there are no bean flecks visible.

Freezing Directions:

Transfer mixture to a nonfreezer gallon bag. Cut a small hole in the bottom corner of the bag and use it to pour/squeeze the purees into ice cube trays. DO NOT OVERFILL.  Only fill each cube up to the sides and not overflowing the sides. Cover each tray with aluminum foil and label.  Freeze for at least 24 hours before transferring to quart or gallon freezer bags for long-term storage.

Servings: 8 cubes
