My husband is somewhat of a Sandwich Maestro. He looooovvvveeesss to create a good sandwich. This, by far is his favorite creation to date. On a regular basis we buy the needed ingredients and he assembles these at work. When we were on vacation he made me my first one and for a non-sandwich lover, I truly enjoyed every bite. There was so much fresh summer flavor.

Ingredients:
.5 lb bacon, cooked
8 Slices of Sandwich Bread (He prefers Rosemary Olive Oil, but you can use any kind)
4 tablespoons of Mayonnaise
8 Lettuce Leaves
2 Avocados, sliced
4 slices Pepper Jack Cheese
1 tomato, sliced
Directions:
Cook the bacon until crispy (we tend to do this ahead so that we don’t have to prepare it at lunch time). Lightly toast the sandwich bread. Spread one tablespoon of mayonnaise on the slices of bread. Choose 4 slices of bread for stacking your sandwich. Place the remaining ingredients in this order: lettuce, avocado, pepper jack, bacon, tomato and additional lettuce. Add the top sandwich slice and you are ready to eat!
