When I set out to do this post I definitely had sundried tomatoes in mind for the 4th of July weekend. It was my every intention to make a red, white and blue salad with sundried tomatoes, blue cheese (which is actually white) and something blue, maybe blue corn chips? But then the posting time grew near and we were invited over for an impromptu dinner at the in-laws. We were requested to bring salad and I decided instead to use ingredients that I already had on hand. We all know that I have a *thing* for sundried tomatoes. And buffalo sauce. No don’t worry, I didn’t marry those two ingredients. Yet. I had Romaine lettuce on hand and was thinking I wanted to do something creamy and away from the vinaigrettes that I have been doing the past few weeks. Add to that the fact that my husband loves Caesar salads and I came up with this combination. And it was a fabulous one.
