Skillet Mac and Cheese

Ingredients

4 servings
  • 1 cup cook Ground Beef
  • ¾ cups dice Onion
  • 2 teaspoons mince Garlic, Cloves
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • 15 ounces Diced Tomatoes, Canned
  • 6 ounces Tomato Paste
  • 4 cups Beef Broth/Stock
  • 1 tablespoon Chipotle Powder
  • 2 teaspoons Cumin
  • 1 teaspoon Paprika
  • ½ teaspoons Oregano, Dried
  • 16 ounces Elbows
  • 2 cups Cheddar Cheese, Shredded

Directions

In a large pan, add ground beef, onion and garlic over medium high heat. Season with salt and pepper. Cook for 5 minutes, then add tomatoes, tomato paste and beef broth. Stir in chipotle chili powder, cumin, paprika, and oregano. Bring to a boil, then add macaroni noodles. Cover and cook for 5 minutes. Noodles should be just barely al dente. Add cheese and stir well.

Freezing Directions

In a large pan, add ground beef, onion and garlic over medium high heat. Season with salt and pepper. Cook for 5 minutes, then add tomatoes, tomato paste and beef broth. Stir in chipotle chili powder, cumin, paprika, and oregano. Bring to a boil, then add macaroni noodles. Cover and cook for 5 minutes. Noodles should be just barely al dente. Add cheese and stir well. Allow to cool. Divide between indicated number of baking pans. Cover tightly with foil, label and freeze.

Serving Day Directions

Reheat in oven at 325F for 10-15 minutes, until warmed through.
