Pork and Vegetable Stir Fry

Directions

Place cubed pork in a bowl. Sprinkle with red pepper flakes, ginger, and soy sauce. Toss to coat. Let marinate at least 30 minutes in the refrigerator. Heat oil in a large skillet over medium heat. Add pork and brown meat, about 10 minutes. Add onion and saute until soft, about 5 minutes. Add in garlic, cooking for about a minute. Then, stir in chicken broth. Simmer for 30 minutes. Add in frozen vegetables and cook for another few minutes. Mix cornstarch and water in a small bowl. Bring stir fry to a boil. Add in cornstarch mixture to thicken, boiling for an additional minute.
