I am so sorry to hear you are having issues with this meatball recipe. Usually when meatballs fall apart, it’s the binder that is the problem. Most meatball recipes call for using bread crumbs and eggs. But too much bread crumbs make them too loose, and not enough bread crumbs won’t help them hold together either.

I see this recipe doesn’t call for breadcrumbs at all – so what is the dry ingredient that is the binder?
Hi Anissa, there is no dry binder in this recipe like breadcrumbs. Since the recipe is low carb, those were left out. The egg and Parmesan cheese should help to bind the meatballs. If you do have trouble getting them to form for you, you can certainly add breadcrumbs or a dry binder. If you’re trying to avoid gluten, I might suggest a little quinoa.
Anissa- good binders that are friendly to this type of diet are flax seed (look up flax seed egg replacer) or chia seeds (add a little extra liquid to compensate for them absorbing some).
