I think you could use any kind you prefer. For our recipe, we just used mild ground sausage found in the meat section of the store. BUt if you prefer a spicier sausage, you could use spicy, Italian or even Chorizo. Reply
My poblano peppers were too flat to stuff, so I cut them into long strips and layered the ingredients as a casserole. It was so delicious! Reply

I accidentally bought Italian sausage but used it anyway. It was FANTASTIC.
