Instant Pot Potato Salad Recipe
Sauté 6 slices of chopped bacon in IP until mostly cooked. Add trivet (leave bacon and grease in). Add 3 lbs Yukon gold or yellow fingerling potatoes, chunked. Add 1 cup water. Set to high pressure for 10 minutes. When done, quick release. Pull out potatoes and bacon. Dump bacon grease water in trash. Strain potatoes and bacon and mix with 1-1.5 cups shredded cheddar cheese, 1/4 cup mayo, 1/4 cup sour cream, 1/4 cup ranch dressing. Stir. I added chives too.
Instant Pot Corn on the Cob
Turn Instant Pot on Saute for 5 minutes to warm the unit up. Add trivet and 1 cup of water, place corn on trivet. Set to manual pressure for 3 minutes. Quick release when finished. Enjoy!”
