Paleo Bacon and Brussel Sprout Hash

If you have never tried brussel sprouts because of their reputation, then try this recipe! Nothing makes winter vegetables shine like bacon (the perks of the Paleo life, am I right?) This light vegetable dish is versatile as it can work as a lunch, light dinner, or even a hearty side dish.

Paleo Bacon and Brussel Sprout Hash

Ingredients:

  • 8 ounces bacon
  • 1 cup diced cauliflower
  • 4 cups diced brussel sprouts
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon thyme
  • 1 teaspoon balsamic vinegar

Directions:

In a skillet, brown the bacon. Set aside and chop. In the same skillet, add olive oil, brussel sprouts, cauliflower and saute 4-5 minutes. Add in dried thyme, chopped bacon, and balsamic vinegar.

Freezing Directions:

In a skillet, brown the bacon. Set aside and chop. In the same skillet, add olive oil, brussel sprouts, cauliflower and saute 4-5 minutes. Add in dried thyme, chopped bacon, and balsamic vinegar. Divide among indicated number of quart freezer bags.  TO SERVE: Thaw. Reheat in microwave until heated through.

Servings: 4

    Made this for dinner tonight, served with gemelli & meatballs in traditional spaghetti sauce. Only changes: added diced onions and minced garlic with pre-diced bacon to cook together, added a bit of salt and pepper with the sprouts. It is absolutely phenomenal! Definitely adding to regular veggie rotation! Thinking about trying adding some mushrooms next time, too…
