Watermelon Banana Smoothie

It’s probably no surprise that I enjoy freezing things that are not “normal” freezer foods.  Watermelon is one such ingredient.  I love watermelon but if you buy one that is too big, you can be eating watermelon for DAYS.  Never fear- you can make a Watermelon Banana Smoothie and throw it in the freezer for when you are ready to taste watermelon again.    What I love most about having smoothies pre-made is I can take it out of the freezer as soon as I get up and have my breakfast ready and waiting on me when I need to walk out of the door.

Watermelon Banana Smoothie

Ingredients:

  • 1 cup watermelon, chopped
  • 1 medium banana, sliced
  • 1 cup vanilla yogurt

Directions:

Place all ingredients in blender.  Blend until smooth.  Place in freezer for 20 minutes to chill.  Serve cold.

Freezing Directions:

Blend smoothie as directed above.  Divide into two quart sized freezer bags, label, and lay flat to freeze.  To serve: thaw on countertop until smoothie is desired consistency.  Serve cold.

    can you freeze in portable containers??? trying to portion into a cup of some sort so we can grab and go.

      Hi Leigh! You could freeze in plastic cups. A few options from there- you could put the cups into gallon freezer bags, but it might take several. You could cover the cups with plastic wrap tightly if you have the freezer space to store them. Or, you could remove the cup shaped smoothie once frozen and then day of, grab the smoothie and throw into a cup again. Let me know what you try and if you find a good solution!
