Wholesome Tuna Salad Sandwich

Ingredients:

  • 10 ounces tuna, packed in water
  • 0.25 cups yogurt
  • 0.5 teaspoons lemon juice
  • 0.25 cups carrots, grated
  • 0.25 teaspoons dill
  • 0.5 teaspoons parsley
  • 0.25 teaspoons Dijon mustard
  • 0.25 teaspoons garlic powder
  • 0.25 cups red onion, diced
  • 0.5 teaspoons honey
  • 4 slices provolone cheese
  • 4 whole wheat sandwich thins

Directions:

In a large bowl combine tuna, yogurt, lemon juice, carrots, dill, parsley, Dijon mustard, red onion, garlic powder and honey. Divide tuna mixture over the bottom portion of sandwich thins. Top each with one slice of provolone cheese, followed by top bun.

Freezing Directions:

Prepare as directed above. Wrap each sandwich in plastic wrap, then place in gallon freezer bags. Label and freeze. To serve: Thaw. Unwrap from plastic wrap and enjoy.
