It’s another post-holiday week and it’s also gearing up for the new year, when many of us will renew pledges of healthy eating. I, for one, am excited to wrap up my 2011 New Year’s Resolution, 365 days of converting family favorites into vegetarian meals over at Veggie Converter.
And my New Year’s resolution for 2012 will involve using even more whole foods for our family. We’ve already begun this journey, but of course, we’re not perfect. I plan to follow Kelly’s Get Real series in 2012 to help our family make the transition to even more whole foods. I won’t resolve to be fully whole foods at any particular time, but, I will work to become “more whole” throughout the year.
Menu Plan Monday
This week we’re doing a bit of a Mexican theme and using a lot of fresh veggies from our CSA box. We’re also packing on the carbohydrates since we’re getting over illness and the kids lost a bit of weight.
Monday –
- Toddler Lunch – Festive Garlic Butter Pasta {Vegetarian} and Pumpkin Brownies {Vegan} for dessert
- Dinner – Pumpkin Black Bean Enchiladas {Vegan} made with Easy Homemade Enchilada Sauce {Vegan}
Tuesday –

- Dinner – MexiBurger {Vegan}
Wednesday –
- Toddler Lunch – Chinese Green Beans {Vegan} and Potato Kale Bread {Vegan}
- Dinner – Slow Cooker Indian Potato Kale Soup {Vegan}
Thursday –
- Toddler Lunch – Pumpkin Alfredo Garlic Flatbread {Vegetarian}
- Dinner – Slow Cooker Broccoli Risotto {Vegetarian}
Friday –
- Toddler Lunch – Roasted Corn Salsa Quesadillas {Vegetarian}
- Dinner – Slow Cooker Chili {Vegan}
Saturday –
- Toddler Lunch – Chili Rollatini {Vegetarian}
- Dinner – Maple Glazed Turkey Roast {Vegetarian}
Sunday –
- Toddler Lunch – French Toast Sticks {Vegetarian}
- Dinner – Hoppin’ John Black Eyed Peas {Vegan}
