  • 2 1/2 cups chop Bok Choy, Baby
  • 1/2 cups Soy Sauce, Low Sodium
  • 1/4 cups Chicken Broth/Stock
  • 1 tablespoon Honey
  • 1 tablespoon Brown Sugar
  • 1/4 teaspoons Ginger, Ground
  • 1 teaspoon mince Garlic, Cloves
  • 2 tablespoons Cornstarch
  • 8 ounces Soba Noodles

Why would I want to freeze this?

  1. Season the chicken with salt and black pepper.
  2. Heat canola oil #1 in a cast iron skillet over high heat.
  3. Add the chicken and turn the heat down to medium. Cook, stirring occasionally until the chicken is cooked through, about 4 minutes.
  4. Remove the chicken to a plate.
  5. Add canola oil #2, broccoli, carrots and bell peppers to the skillet. Cook for 2 minutes, stirring occasionally.
  6. Add the mushrooms and bok choy to the skillet. Cook for 3 minutes.
  7. Whisk together the soy sauce, chicken broth, honey, brown sugar, ginger, garlic and cornstarch.
  8. Stir in the chicken, soba noodles and sauce. Cook for 1-2 minutes.
  9. Let cool.
  10. Divide among the indicated number of freezer bags. Seal, label and freeze.
