<p>These Anzac Crispies with Macadamia Nuts are a variation on the treats sent to soldiers of the Australia New Zealand Army Corps during WWI. Crispy and sweet, the perfect accompaniment to a cup of tea.</p>

Ingredients

  • 1/2 cups Macadamia Nuts, Raw
  • 1 cup Flour, All-Purpose
  • 1 cup Rolled Oats
  • 1/2 cups Sugar
  • 1/2 cups Brown Sugar
  • 1 cup Coconut, Shredded, Unsweetened
  • 1/2 teaspoons Sea Salt
  • 4 ounces Butter
  • 2 tablespoons Corn Syrup, Dark
  • 2 tablespoons Water, Boiling
  • 1/2 teaspoons Baking Soda

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Place whole macadamia nuts on a lined baking sheet and bake at 350 for about 6 minutes or until nuts are lightly browned. Half way through cooking time, give the nuts a stir or shake the pan so that they toast evenly.
  2. Cool the macadamia nuts and roughly chop.
  3. In a large mixing bowl, stir together chopped macadamias, flour, oats, sugar, brown sugar, coconut flakes, and sea salt.
  4. Heat butter and syrup in a small sauce pan over low heat until they melted. Stir to combine and remove from heat.
  5. In a separate bowl, combine boiling water and baking soda, then stir into the butter mixture.
  6. Stir the butter mixture into the dry ingredients to form a stiff dough. You can use your hands to mix to make sure all the ingredients are distributed evenly.
  7. Drop rounded tablespoons full of dough onto a parchment lined baking sheet and flatten just slightly.
  8. Bake at 325 degrees for 12-15 minutes or until golden. (The cookies will be crispier the longer they are cooked and the thinner you press the dough.)
  9. Cool on a wire rack and serve.
