These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Heat olive oil in skillet over medium heat.
- In large mixing bowl, mix eggs, sour cream, salt, pepper, and garlic powder.
- Add mixture to pan. Use a rubber spatula to scramble the eggs.
- Remove from heat when slightly undercooked.
- Add bacon, cheese, roasted red pepper, green onions, and cilantro. Gently fold to combine.
- Warm tortillas in microwave to help with rolling.
- Place 1/4 cup egg mixture into center of each tortilla and roll. Place tortillas seam side down on greased baking dish.
- Bake in a 425 degree oven for 15 minutes, or until edges are brown.

Shonda, I just rolled them up burrito style, seam side down on the pan. I had to warm the tortillas up a bit in the microwave to make them more pliable so they would roll easier and not break.
Ive neer commentedbon a recipe before, but made them yesterday for the first time and they were so delicious that I wanted to comment! I used turkey ham instead of bacon, but I don’t think anyone would have noticed the difference, because they were gone within minutes. Three grown men declared that those were the best taquitos they’ve ever had!!!
is there a non-wheat alternative for the tortillas?
You could use corn tortillas if you’d like. If you’r going for no grains, you can try cabbage leaves I’ve seen that being used.
You can also get brown rice tortillas. I found them at Trader Joes.
These. Are. Awesome! However, when eating them for breakfast I realized I forgot to add the bacon. LOL

Are these also microwaveable from the freezer? I have my hubby who does not eat the best and I think he would enjoy these, however, he leaves for work at 6am and doesn’t eat breakfast till he is at work. There is no oven but there is a microwave. I thought maybe I can make up at batch for him to bring to work and he can have this instead of fruit loops or whatever horrible cereal is eating now.
Rosie – If microwaving in the morning for breakfast, I would suggest to bake before freezing. They will not be as crispy after microwaving as they would if baking that morning in the oven, but they will still be delicious! And yes, a great option for your hubby on the go!
I microwave these all the time. I do bake before freezing and let them cool. I then put them in a gallon ziplock bag. One of these and some plain Greek yogurt is my go-to breakfast on work days. I don’t put bacon in but add mushrooms and chopped broccoli. In the middle of making a double batch right now!

Can you tell me what the sour cream does with the egg mixture? I have never tried it with that in it …

No cheese?
There is shredded cheddar cheese in the ingredients but if you would like to omit the cheese I’m sure they would be okay without it.
