These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Line a standard muffin tin with paper cups.
- In a mixing bowl, whisk together the oat bran, baking powder, brown sugar, cinnamon and nutmeg.
- In a separate mixing bowl, mix together the mashed bananas, milk, egg whites and agave nectar.
- Add the wet ingredients into the dry ingredients and whisk until combined.
- Fold in the walnuts.
- Divide the batter evenly between the muffin cups.
- Bake at 425 until the muffins are lightly browned and a knife inserted in the center comes out clean, about 12 to 15 minutes.
- Cool the muffins in the pan for 5 minutes, then remove to a wire rack to cool completely.
