  • 1 cup cook and chop Flank Steak
  • 2 cups Cheddar Cheese, Shredded
  • 8 ounces Black Beans, Canned
  • 1 cup cook Brown Rice, Short-Grain
  • 1/2 cups Salsa
  • 16 ounces Guacamole

  1. Heat olive oil in a large skillet over medium heat.
  2. Meanwhile, layer one half of each tortilla with 2 Tablespoons steak, 1/4 cup cheddar cheese, 2 Tablespoons black beans, 2 Tablespoons cooked rice, and 1 Tablespoon salsa.
  3. Fold in half and carefully place in hot oil. Cook 2-3 minutes until browned.
  4. Flip with a spatula and cook another 2-3 minutes or until browned and cheese is melted.
  5. Remove to a plate or wire rack to cool.
  6. Repeat until all quesadillas have been cooked.
  7. Slice into triangles and serve with guacamole.
