Blueberry Granola Pancakes

  • 1/4 cups Rolled Oats, Quick Cooking
  • 1 cup Flour, All-Purpose
  • 1/4 cups Flour, Whole Wheat
  • 1/4 cups Cornmeal
  • 1/8 cups Wheat Bran, Unprocessed
  • 1/8 cups Wheat Germ
  • 1/8 cups Sugar
  • 1 teaspoon Baking Powder
  • 3/4 teaspoons Salt
  • 1/2 teaspoons Baking Soda
  • 2 cups Water
  • 1/8 cups Applesauce
  • 1 cup Blueberries, Frozen
  • 1 cup Granola
  • 1 teaspoon Cinnamon

  1. In a medium bowl, mix together oats, flours, cornmeal, wheat bran, wheat germ, sugar, baking powder, salt and baking soda.
  2. Add in water and applesauce until batter is no longer lumpy.
  3. Add blueberries, granola, and cinnamon, stirring until just blended.
  4. Spray griddle or frying pan and heat on high setting.
  5. Using about 1/2 cup of batter for each pancake, cook pancakes until bubbles form and edges turn brown.
  6. Turn and cook on other side until pancakes are lightly brown.
