Why would I want to freeze this?

  1. Cut tortillas into fourths.
  2. Grease a muffin tin and press a tortilla quarter into each spot to create a cup.
  3. In a medium bowl, mix together eggs, milk, salt, and pepper.
  4. Sprinkle bacon, spinach and red bell pepper into each tortilla cup.
  5. Pour egg mixture over toppings.
  6. Sprinkle cheese over each cup.
  7. Bake, covered with foil, in a 350 degree oven for 25 minutes or until egg is cooked through.
  8. Flash freeze.
  9. Divide among indicated number of freezer bags, label and freeze.
