"Brinner" Enchiladas

<p>Homemade crepes stuffed with cheesy eggs, bacon, and chiles. An easy and delicious meal for breakfast or dinner.</p>

Ingredients

  • 6 individual Bacon
  • 1/2 cups dice Bell Pepper, Green
  • 1/2 cups dice Onion
  • 8 individual Egg
  • 1/2 cups Whole Milk
  • 1/2 cups Cheddar Cheese, Shredded
  • 2 tablespoons drain Mild Green Chiles, Diced, Canned
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 1 teaspoon Garlic Powder
  • 8 individual Flour Tortillas, Whole Wheat (8-inch/Med)

Serving Day Ingredients

  • 1/2 cups Salsa
  • 1/3 cups Sour Cream
  • 1/3 cups Cayenne Pepper Sauce

  1. In a large skillet, cook bacon over medium low heat until crisp.
  2. Remove to a paper towel. Do not remove drippings.
  3. In the same pan, saute bell pepper and onion.
  4. Meanwhile, in a large bowl whisk together eggs, milk, cheese, green chiles, salt, pepper, and garlic powder.
  5. Crumble bacon and stir into egg mixture.
  6. After 5-7 minutes when vegetables are soft, add egg mixture to the pan.
  7. Scramble until eggs are set.
  8. Divide eggs evenly among crepes and roll.
  9. Place seam side down in baking pans.
  10. Serve with salsa, sour cream, and/or hot sauce as desired.
