  • 2 tablespoons Olive Oil
  • 1/2 cups dice Onion
  • 3 teaspoons mince Garlic, Cloves
  • 1/2 cups dice Celery
  • 1/2 cups dice Bell Pepper, Green
  • 1/2 cups slice Okra
  • 14 ounces Diced Tomatoes with Green Chiles
  • 1/2 cups Water
  • 1 tablespoon Tomato Paste
  • 1/8 teaspoons Cayenne Pepper
  • 1 tablespoon Cajun Seasoning #1
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 2 1/2 cups rinse, drain, and cook Quinoa
  • 3/4 cups cook Shrimp, Fresh
  • 1 tablespoon Cajun Seasoning #2

  2. Add onions, garlic, celery, and green bell pepper. Cook for 5 minutes.
  3. Stir in okra. Cook until all vegetables begin to soften, about 3-4 minutes.

  5. Cook for about 5 more minutes, until mixture begins to thicken.

  7. Transfer quinoa mixture to a baking pan and arrange shrimp over the top.
  8. Bake at 350F until brown, about 15 minutes.
