Why would I want to freeze this?

  1. Steam cauliflower pieces over medium-high heat for 3-4 minutes, stirring twice.
  2. Once they are tender, but not mushy, transfer to a blender.
  3. Add butter, salt, garlic powder and pepper to the blender.
  4. Pulse a couple of times, then blend on low for 20-30 seconds. Be careful not to over process or they will be too runny.
  5. Divide among indicated number of baking dishes and sprinkle with parsley.
  6. Cover with foil, label and freeze.
