Ingredients

  • 1/4 cups Olive Oil
  • 1 1/4 tablespoons Balsamic Vinegar
  • 1 teaspoon mince Garlic, Cloves
  • 1/2 teaspoons Sea Salt
  • 1/2 teaspoons Black Pepper
  • 2/3 cups dice Artichoke Hearts, Marinated, Canned
  • 1 cup cook and shred Chicken, Boneless Breasts
  • 1/2 cups Spinach
  • 1/2 cups Parmesan Cheese, Shredded
  • 4 individual Mozzarella Cheese, Sliced
  • 2 individual French Bread, Whole Wheat

  1. In a small bowl, whisk together olive oil, vinegar, garlic, salt and pepper.
  2. In another bowl, mix together artichoke, chicken, spinach, parmesan and half of the liquid dressing.
  3. Layer slices of cheese and chicken mixture between the two layers of bread.
  4. Brush remaining dressing on outside layers of sandwich and grill until golden brown and cheese melts, pressing occasionally to compact sandwich, about 5 minutes per side.
  5. Cut into indicated number of sandwiches and serve.
