  1. Divide the rice, water, and half of the parmesan cheese among indicated number of baking dishes. Stir to combine.
  2. Stir in the cheese soup, broccoli, chicken, and onions. Cover with foil.
  3. Bake at 400º for 25 minutes.
  4. Sprinkle with remaining parmesan cheese and the mozzarella.
  5. Bake another 10 minutes, or until the cheese is melted. (You can also do this in the broiler for 2 minutes if you want to brown the cheese).
