  • 2 cups dice Ham, Fully Cooked
  • ½ cups Mayonnaise, Fat Free
  • 1 ounce Ranch Dressing Mix
  • 1 cup Skim Milk
  • ¾ cups Cheddar Cheese, Shredded

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Par boil potatoes until slightly tender when pricked with a fork. (They will finish cooking in the oven)
  2. In a bowl combine potatoes, garlic, onion and ham.
  3. In another bowl combine mayo, ranch mix, milk and cheese.
  4. Add mayo mix to potatoes and stir to combine.
  5. Spread mixture into a roasting pan.
  6. Bake at 350 for 30 minutes, stirring half way through.

  1. I was unable to get the Ranch Dressing mix in my location and opted not to order on Amazon. Instead I played with a combination of Mayo and Ranch to try to get the flavour. The first attempt left a rather runny casserole, so the second attemp was to reduce the milk as well. We absolutely love the result, although it probably doesn’t have as intense a flavour as the original, which we are fine with as we eat rather bland, anyway. It is a great grab and go and microwaves well from frozen for a fast dinner or quick thermos lunch. I think I will add some more sauteed or frozen veggies other than onions next time to bulk this up into more of a whole foods dinner. Peas and/or carrots would be nice.

    1. Those suggestions sound wonderful! I like to chop up cauliflower and add that to meals to stretch them or add bulk as well. I think veggies, particularly green beans, would be great in this dish too!

  2. I added broccoli and extra cheese to the top. Yum! This is a family favorite!
    We reheat in the oven at 350 for 30 mins if defrosted or 1 hr if frozen. Last 10 mins remove foil to melt cheese on top. (We are a family if 8 so microwaving this would be to labor intensive get it all over in one action!)
