Why would I want to freeze this?
- Mix together the shredded zucchini, eggs, breadcrumbs, Parmesan, basil, garlic and salt.
- Take a handful of the zucchini mixture and place a cube of mozzarella in the middle. Squeeze it tightly and place on a greased baking sheet. Repeat until all of the mixture has been used.
- Bake for 14-16 minutes at 425 degrees.
- Let cool.
- Divide meatballs among half of the indicated number of bags.
- Divide noodles among remaining bags. Divide sauce on top of noodles. Seal, label and freeze all bags.
