Chicken Curry Wraps with Cashews, Raisins and Pineapple - Lunch Version

Ingredients

  • 2 tablespoons Olive Oil
  • 2 1/2 cups dice Onion
  • 1 cup Cashews, Raw
  • 1 cup Raisins
  • 1 cup chunk Pineapple
  • 3/4 cups cook and dice Chicken, Boneless Breasts
  • 2 cups cook White Rice, Long-Grain
  • 6 teaspoons Curry Powder
  • 8 individual Flour Tortillas (10-inch/Large)

  1. Heat olive oil in a large skillet over medium heat.
  2. Brown onion in warmed olive oil.
  3. Remove from pan.
  4. In same pan place cashews for brief toasting.
  5. After about a minute or two add in the raisins and pineapple.
  6. Heat until warmed through.
  7. In a large mixing bowl mix all ingredients except tortillas until well incorporated.
  8. Place mixture in the middle of a tortilla and wrap.
  9. Serve warm.
