  • 1/8 teaspoons Cumin
  • 2 teaspoons chop Parsley, Fresh
  • 1/4 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 1 tablespoon Olive Oil
  • 4 tablespoons dice Green Onion (Scallion)
  • 1 teaspoon mince Garlic, Cloves
  • 1 cup drain Garbanzo Beans (Chick Peas), Canned
  • 2 tablespoons Parmesan Cheese, Shredded

Why would I want to freeze this?

  1. In a bowl, whisk together the eggs, cumin, parsley, salt and pepper.
  2. Heat the olive oil over medium heat and cook the onion and garlic for 2-3 minutes.
  3. Add the chickpeas and cook for another 2-3 minutes.
  4. Add the chickpea mixture to the eggs.
  5. Pour mixture into an oven safe skillet and cook over low heat until browned on the underside and nearly cooked on top.
  6. Sprinkle with Parmesan cheese and place under the broiler until the eggs set and the frittata is golden.
  7. Allow to cool.
  8. Cut into individual servings and divide among the indicated number of freezer bags. Label and freeze.
