- Spray baking sheet with cooking spray. Combine coconut milk, brown sugar, vanilla, coconut extract, and egg in a medium mixing bowl.
- In a large bowl, combine flour, baking powder, shredded coconut, and salt.
- Using a hand mixer, blend cut butter into flour mixture until butter is broken into small pieces.
- Mix wet ingredients into dry ingredients and stir in chocolate chips.
- Knead dough a few times on a lightly floured surface. Form dough into an eight inch disk and cut into eight pieces.
- Bake at 375 for 15-20 minutes, or until scones golden.
