Why would I want to freeze this?
- In a food processor, pulse the oats, baking powder, salt, brown sugar, and protein powder together until it has a semi-fine flour appearance.
- Add in the coconut oil and coconut milk. Pulse again until cookie dough forms.
- Remove the blade and fold in the coconut flakes.
- Form the dough into 3 inch cookies and place on a greased baking sheet.
- Bake at 375 degrees for 6 minutes.
- Let cool.
- Divide among the indicated number of freezer bags. Label and freeze.
