Why would I want to freeze this?

  1. In a food processor, pulse the oats, baking powder, salt, brown sugar, and protein powder together until it has a semi-fine flour appearance.
  2. Add in the coconut oil and coconut milk. Pulse again until cookie dough forms.
  3. Remove the blade and fold in the coconut flakes.
  4. Form the dough into 3 inch cookies and place on a greased baking sheet.
  5. Bake at 375 degrees for 6 minutes.
  6. Let cool.
  7. Divide among the indicated number of freezer bags. Label and freeze.
