Cranberry Nut Protein Bars

<p>These seasonally flavored granola bars are packed with nuts for protein. When made ahead they make a super quick, healthy breakfast.</p>

Ingredients

  • 1/3 cups Maple Syrup
  • 1/3 cups Almond Butter
  • 1/4 cups Butter, Unsalted
  • 1/4 cups Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pumpkin Pie Spice
  • 2 1/2 cups Rolled Oats
  • 1/4 cups Almonds, Sliced
  • 1/4 cups chop Pecans
  • 1/4 cups Pumpkin Seeds (Pepitas)
  • 1/2 cups chop Cranberries, Dried

  1. Spray one 8x8 square baking pan per 10 servings with cooking spray.
  2. Heat maple syrup, nut butter, unsalted butter, brown sugar, vanilla extract, salt and pumpkin pie spice in a sauce pan until mixed all the way.
  3. Remove pan from heat and add in oats, almonds, pecans, pumpkin seeds and cranberries; mix well with a spatula.
  4. Pour oat mixture into oiled pan and push down so it is tightly packed.
  5. Allow to cool.
  6. Push mixture down into pan once more after cooling.
  7. Bake uncovered at 350 for 30 minutes.
  8. Allow to cool completely.
  9. Cut into 10 squares.
