Creamy Cauliflower and Ham Casserole

Ingredients

  • ¼ cups Butter, Cubed
  • ⅓ cups Flour, Whole Wheat
  • 2 cups Milk
  • 1 ½ cups Cheddar Cheese, Shredded #1
  • ¼ cups Swiss Cheese, Shredded
  • ½ cups Sour Cream
  • 4 cups dice and cook Cauliflower
  • 2 cups grate Carrot
  • ¼ cups dice Shallot
  • 2 cups dice Ham, Fully Cooked
  • 1 cup Bread Crumbs, Whole Wheat
  • ¼ cups Cheddar Cheese, Shredded #2

  1. In a large saucepan, melt butter.
  2. Stir in flour until smooth, slowly whisking in milk.
  3. Bring to a boil, stirring for 2 minutes until thick.
  4. Remove from heat, stirring in cheddar cheese #1, swiss cheese and sour cream.
  5. Stir in cauliflower, carrots, shallots and ham.
  6. Divide between indicated number of 8x8 foil baking pans.
  7. Top with bread crumbs and sprinkle with cheddar cheese #2.
  8. Bake at 350F for 40 minutes, or until heated through.
