- In a large saucepan, melt butter.
- Stir in flour until smooth, slowly whisking in milk.
- Bring to a boil, stirring for 2 minutes until thick.
- Remove from heat, stirring in cheddar cheese #1, swiss cheese and sour cream.
- Stir in cauliflower, carrots, shallots and ham.
- Divide between indicated number of 8x8 foil baking pans.
- Top with bread crumbs and sprinkle with cheddar cheese #2.
