These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Place egg in a shallow bowl and bread crumbs on a plate.
- Cut pressed tofu lengthwise into indicated number of servings.
- Dip each piece of tofu in egg.
- Dip each piece of tofu in breadcrumbs, making sure they are entirely covered.
- Heat oil over medium heat.
- Cook each piece of tofu for 5-7 minutes on each side, until brown.
- Top each tofu piece with buffalo sauce.
- Spread blue cheese dressing on top of sandwich rolls.
- Serve tofu on sandwich rolls.

Instead of bread crumbs, you could grind up almonds and cover them in the almond “flour” (if you don’t have a nut allergy of course). Gluten free sandwich rolls are pretty easy to find/make.
