Coconut Chicken with Apricot Sauce - Lunch Version

<p>An easy to prepare breaded chicken paired with an Apricot Jam or Sweet and Spicy Garlic Chili Sauce.</p>

Ingredients

  • 1 cup Coconut, Shredded, Unsweetened
  • 1/2 cups Panko Bread Crumbs
  • 1/2 teaspoons Garlic Powder
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 2 pounds Chicken, Boneless Breasts
  • 1/2 cups melt Butter
  • 1 cup Apricot Jam

  1. Lightly beat eggs in a bowl.
  2. In another bowl, mix together coconut, panko crumbs, garlic powder, salt and pepper.
  3. Place chicken between two pieces of plastic wrap and flatten slightly with a kitchen mallet.
  4. Dredge chicken in beaten egg and then coat with coconut mixture.
  5. Place on a parchment covered baking sheet.
  6. Repeat with remaining chicken.
  7. Drizzle chicken with melted butter and bake at 400 for 30-40 minutes (Flip halfway through cooking time.) until cooked through and crispy.
  8. Serve with Spicy Apricot Freezer Jam.
