  1. Heat coconut oil in a non-stick skillet over medium heat, combine broccoli, cauliflower, and garlic.
  2. Cook for 5 minutes until veggies are tender.
  3. Transfer to a mixing bowl, add diced ham, and allow to cool.
  4. In a separate bowl combine eggs, egg whites, almond milk, salt, pepper, and onion powder together.
  5. In greased 8x8 baking pan, arrange vegetables in a single layer.
  6. Sprinkle with cheddar cheese.
  7. Pour egg mixture over the top and sprinkle with Parmesan cheese.
  8. Bake at 350F for 45 minutes, or until eggs are set.
