Diet Pork and Pumpkin

Ingredients

  • 2 pounds Pork Roast
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper
  • 1 teaspoon Nutmeg
  • 1 tablespoon Olive Oil
  • 1 ¾ cups Pumpkin, Canned
  • 2 tablespoons Sage, Fresh
  • 1 ⅛ cups slice Onion, Red
  • 1 tablespoon Apple Cider Vinegar
  • 1 ½ cups peel and dice Apple, Granny Smith
  • 1 teaspoon Allspice, Ground

  1. Rub pork with salt, pepper, and nutmeg.
  2. Heat oil in skillet and brown pork roast, about 2 minutes per side.
  3. Transfer to a slow cooker.
  4. Add pumpkin, sage, red onion, and apple cider vinegar.
  5. Cook on low for 6 hours.
  6. One hour before pork is done, add apples and allspice.
  7. Shred pork before serving.

  1. Rub pork with salt, pepper, and nutmeg.

  3. Repeat with all pork.
  4. Allow to cool.
  5. Combine pumpkin, sage, red onion, and apple cider vinegar in a bowl.
  6. Divide among gallon freezer bags.
  7. Divide pork among indicated number of gallon freezer bags, placing over pumpkin mixture.
  8. Divide apples and allspice between indicated number of quart freezer bags.
  9. Place one quart freezer bag inside of each gallon freezer bag. Label and freeze.

  1. Transfer pork to slow cooker.
  2. Cook on low for 6 hours.
  3. One hour before pork is done, add apples and allspice.
