Breakfast on the go is very important in my house. Not only is it the most important meal of the day, it's very important to get both my husband and I full and ready to hit the ground running when we get to work. Protein is key with breakfast and balancing with fiber as well. I was looking for an alternative to our loaded english muffin sandwiches when I came across these power pitas. They are tasty, filling and the Morning Star patties are packed with veggies to sustain you!

is there any reason you dont use egg yolks too?
Kerry you could use egg yolks and they would be just as good, for some diet menus the yolks add extra calories that some people don’t want. This is how it’s outlined in the book, but I like a full egg 🙂
I made these up last night (minus the salsa) and put in the freezer. My husband & 10yr old & I each had one this morning..we all LOVED them! Great to have a good protein boost to start your day. Quick & easy to make, and perfect to eat on the go! Thanks for posting.

Is there a trick to freezing this without them getting freezer burn?
Amanda you can wrap them in plastic wrap before putting them in a freezer bag. Make sure you get the air out as much as you can.
