Why would I want to freeze this?

  1. In a bowl, cream the sugar and oil. Beat in the eggs.
  2. In a separate bowl, stir together the flour, baking powder, baking soda, cinnamon and salt.
  3. Combine the flour mixture with the cream mixture, and then fold in the carrots.
  4. Pour the batter into a greased loaf pan. Bake at 325F for 55-60 minutes or until a toothpick comes out clean.
  5. Cool completely.
  6. Wrap the loaf in plastic wrap and divide among the indicated number of freezer bags. Label and freeze.
