Why would I want to freeze this?

  1. Mix together the chicken, cream cheese and shredded cheese in a microwave safe bowl.
  2. Heat the chicken mixture in the microwave for 45 seconds.
  3. Mix in the spices and salt.
  4. Working in batches of 2, place the corn tortillas between damp paper towels and heat in the microwave for 20 seconds. Place 1/3 cup of the mixture onto one edge. Roll up and place seam-side down on a baking sheet.
  5. Repeat until all of the taquitos have been made.
  6. Flash freeze.
  7. Divide among the indicated number of gallon freezer bags. Label and freeze.
