Why would I want to freeze this?
- Mix together the chicken, cream cheese and shredded cheese in a microwave safe bowl.
- Heat the chicken mixture in the microwave for 45 seconds.
- Mix in the spices and salt.
- Working in batches of 2, place the corn tortillas between damp paper towels and heat in the microwave for 20 seconds. Place 1/3 cup of the mixture onto one edge. Roll up and place seam-side down on a baking sheet.
- Repeat until all of the taquitos have been made.
- Flash freeze.
- Divide among the indicated number of gallon freezer bags. Label and freeze.
