Just had this last week and it was fabulous. My husband said it was the best meatloaf ever! Instead of using the Knorr soup mix (a bit spendy and contains MSG), I used some dehydrated vegetable mix in my store’s bulk section. It came out perfect and delicious!

Yes. I would just defrost 24-48 hours in the refrigerator and cook according to indicated directions or double the cooking time if making from frozen.
What is veggie soup mix? Is that a mixed spice? Or is it the bags of dehydrated veggies/beans/pasta?
Look up Lipton or Knorr Vegetable Soup Mix. It is a packet of dehydrated soup mix. It is readily available in chain grocery stores.
