Why would I want to freeze this?

  1. Spray a muffin tin with nonstick spray, then break each egg into muffin cup
  2. Sprinkle each egg with salt and pepper.
  3. Bake at 350 for 10-15 minutes or until eggs are cooked through.
  4. Layer each muffin with 1 slice of Canadian bacon, 3 Tablespoons of cheese, and egg.
  5. Top with other muffin half.
  6. Allow muffins to completely cool.
  7. Wrap individually in plastic wrap, place in freezer bag. Label and freeze.
