Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

Visit Handmade Cookbook by Melissa K. Norris for same day cooking instructions.

Freeze For Later Cooking Directions

These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).

Why would I want to freeze this?

  1. Mix together the dry ingredients.
  2. Cut the butter into cubes and cut into the dry ingredients using a pastry blender or 2 forks.
  3. Continue to do this until the flour turns into small pea-sized clumps.
  4. Add the honey and buttermilk (starting with just 3/4 of the listed amount), stirring until just combined. If needed, add the final 1/4 of the buttermilk to hold the dough together.
  5. Place dough on a lightly floured surface and fold it together a few times with your hands.
  6. Pat the dough into a 1-inch thick circle. (Don't over handle the dough. Butter will melt as it cooks)
  7. Using a biscuit cutter, cut into biscuits until all dough is used.
  8. Place on a baking sheet or cast iron skillet.
  9. Bake at 400 degrees for 15-18 minutes, until the top becomes golden brown.
  10. Let cool.
  11. Divide among indicated number of bags. Seal, label and freeze.
